Simple & Italian Inspired Chunky Potato  Soup


Came across this delicious soup on Youtube but I couldn't find it again. Fortunately I wrote it down..
It is so so delicious and so so easy.

Ingredients:

What every is left in the fridge basically but these are staples we often have....

Bacon/Prosciutto
Potato 3 -5 peeled roughly depending on the size...the flavoursome ones are nice
Carrots 2
Celery stick
Onion 1
Stock cube 2
Salt to taste

Preparation:

Chop up your bacon/prosciutto
Chop up your veg chunky though celery I chop a little smaller

Cooking:

Fry the bacon
Add carrots, onion, celery cook beyond saute but before sweating

        Sweating in cooking is the gentle heating of vegetables in a little oil or butter, with frequent stirring and turning to ensure that any emitted liquid will evaporate. Sweating usually results in tender, sometimes translucent, pieces.

Add potato
Add water and stock cubes
A little salt to taste

Simmer slowly for a few hours if you're organised, but it will cook in 30 minutes if you're not. I learned as a child from my dad, when potatoes are cooked slowly they are delicious.

If you manage to have some left over the next day, add a little shredded left over roast meat, beef, pork, chicken, lamb to change it up a bit.

Garnish with a little pesto, either store bought or homemade.

Simple Naan Bread & Dahl Dish

Tonight my wife found a very simple 2 ingredient dry fry Naan Bread recipe that was so easy and so so nice.

Ingredients:


2 Cups Self Raising Flour
1 1/2 Cups Greek Yogurt
Salt optional

Method for making dough:


Put flour in bowl, add yogurt and salt to taste. Stir ingredients. Turn out onto a flowered bench or smooth cutting board, knead dough for about a minute. Cut into four pieces. No need to rest it.

Cooking the dough:


Roll out with roller to about 10mm or 15 mm thick. Cook in medium size non-stick frying pan on medium heat for approximately 1 minute. Lift to check that the dough is brown. Flip the dough over and cook about another minute or until brown. If you press the dough and it rises it is cooked. If you don't have a non-stick frying pan you could use a normal frying pan with some oil or butter.

A side dish of dahl and rice and or a curry meat dish and you will enjoy another awesome cost effective meal, just as we did tonight.

Variations:

For variation you can spread the naan bread with garlic butter after removing from the pan. You could add some chives or herbs or dried tomato to the dough before cooking.

For a sweeter taste you could experiment by adding some sugar or honey and or sultanas or other dried fruit.
